Le Schiavette

The name of this wine is “Le Schiavette” because the bunches of grapes are picked in the “Schiavette” area near Castelcerino in the middle of the Soave Classico zone.

Colour: golden-yellow.

Nose: Fine and spicy aroma with scents of vanilla and honey.

Flavour: Warm, ripe, with caramel traits and slightly almond.

Serving temperature: 12-13°C.

Ideally this dessert wine goes well with dry pastry, blue cheeses and pate de foie gras. Nonetheless, it is also considered a wine for socialising and makes a perfect drink to share amongst friends..

Garganega 100%

VINIFICATION

The best grapes of Garganega are picked by hand in the first ten days of September , then put into boxes where they rest to wither in dry and well-ventilated rooms: the “fruttai”. In about late February the dried grapes are pressed and the must is left to ferment in small oak casks until the following year. 

Alcohol content: 14% vol

AGING 

The wine matures with its own yeasts in oak casks for at least three months. The wine is only completely ready after at least three months after bottling.

Altitude 110-250 m. asl

Vineyard exposure  South-East

Soil calcareous origin, moderately alkaline alternated with basaltic origin, shallow, and dressed with clay-loam surrounding Castelcerino.
