VINIFICATION

The grapes are harvested manually at the beginning of October, when the ripening is optimal. After removing the grape-stalk the grapes are pressed and immediately refrigerated, so as to undergo a short cryomaceration prior to a soft pressing. We let the must ferment in temperature conditioned tanks.

Alcohol content: 12.5% vol

AGING

The wine matures with its own yeasts in stainless steel containers for at least three months. This has the effect of consolidating the fragrance and longevity of the aroma.
