VINIFICATION
Maceration on the skins on selected yeasts for about 8/10 days at controlled temperature. After the maceration, fermentation continues in stainless steel vats. At the end of the fermentation, the products continues to refine in stainless steel vats. After the ageing period, the wines goes in bottles before to release.

CLIMATE

The vineyard is located in an amphitheatre of limestone rolling hills overlooking the sea of the south Sardinia.. the same sea that is able to mitigate the winter and to refresh the summer nights, and the mistral wind that blows constantly bringing salinity from the sea that is added to the minerality coming from the soil.
