“Elegant and refined powder pink colour, brilliant and transparent, with a fine and persistent perlage. Fragrant aromas of bread crust, rose petals, cherry, raspberry and pomegranate. Well-structured on the palate, with balanced acidity-sapidity and floral persistence. The long aging gives delicate tertiary notes with a finish of great complexity and elegant freshness.”

HARVEST

Grapes harvested in the fist half of August.

VINIFICATION

Hand harvesting in small crates after an accurate selection in the vineyard. The temperature of the grapes is dropped to 8-10ºC, a light pressing follows, after which the free-run wine is separated and decanted through the process of natural sedimentation at low temperature. An aging period on the fine lees follows during 6 months at temperature controlled in stainless steel tanks. Later a second fermentation takes place inside the bottle with the aging on the yeasts for 36 month. The hand riddling process follows. At least three months in the bottle after the disgorgement, before the releasing on the market.
