It is a range of 8 types of monobotanical gins, perfect for the mixologist and suitable for experimenting with drinks with a strong taste, but also for simple mixing with tonics that enhance the flavors of the distillate. First the distillation of juniper, then the infusion of botanicals. The roasted coffee beans, the mix of your types of fresh and dried rosemary, the cardamom seeds, the balanced quantity of white and yellow peaches, the lavender of the great expanses of Montello, the fragments of beans from Pepe dei Dogi, the fresh lemon verbena plants, basil leaves from Southern Italy are the essence of this gin. The 400 rabbit coffee gin is a distillate obtained exclusively through the infusion, in juniper distillate, of a blend of coffee beans, originating from Ethiopia, after their roasting.
There is no added flavouring to the compound. The juniper distillate itself is the result of aromatic extraction from juniper fruits infused in grain alcohol.
After grinding the beans, part of them will be used by extracting the perfumes in a bain-marie. The remaining part is infused for a few days in ethyl alcohol.
The two products obtained will then be combined by dosing the quantities and complete the finishing process of this unusual product.
Filtration is also done "by hand". The distillate is taken "by gravity" and passed through conical sieves in linen and cotton specially made to keep the organoleptic profile as unaltered as possible. In this way, forced filtrations are avoided which, in some cases, could impoverish the distillate of its more aromatic components.
